Executive Pastry Chef, FARMSHOP

Job Type: Full-time, Exempt

Location: On-site.

Compensation: $110,000 - $125,000/year

Schedule: Weekends and Holiday’s required.

Position Overview:

As the Executive Pastry Chef, you will oversee all aspects of pastry production at our Wholesale Commissary, specializing in bread production, viennoiserie, pastries, and baked goods. You will be responsible for leading the production team, ensuring their quality and consistency, and managing the overall operation of the commissary. Additionally, you will create and maintain the on-site baking program at FARMSHOP Santa Monica, ensuring that the pastry case is always filled with fresh, high-quality products that meet FARMSHOP's standards. Your role will also involve the development and refinement of our Consumer Packaged Goods (CPG) line, which includes testing, research, development and packaging.

Key Responsibilities:

  • Oversee Pastry Production: Lead the production at FS Commissary of bread, viennoiserie, pastries, and other baked goods ensuring consistency, quality, and timely delivery to our locations.
  • On-Site Program Development: Develop and maintain the baking program at FARMSHOP Santa Monica, ensuring that the pastry case is always fresh, appealing, and aligned with FARMSHOP’s brand standards.
  • Quality Control: Regularly inspect the pastries and other baked goods to ensure they meet FARMSHOP’s quality standards, adjusting as necessary to maintain consistency and excellence.
  • Product Development: Collaborate with the culinary team to develop new pastry items for both retail and wholesale operations, integrating seasonal ingredients and industry trends.
  • Consumer Packaged Goods (CPG) Development: Manage all aspects of the testing, R&D, and product development process for FARMSHOP’S CPG line. Work closely with packaging teams to ensure that all products meet FARMSHOP’s high standards of quality and presentation, distribution and retail applications.
  • R&D and Testing: Continuously test new recipes and products, experimenting with different ingredients and techniques to improve quality, shelf life, and customer appeal. Lead the creation and refinement of products tailored to the CPG line, ensuring they meet market demands.
  • Operational Management: Oversee all aspects of the commissary's operations, including inventory management, purchasing, food and labor costing, and ensuring that production levels meet the demand of FARMSHOP's locations. Provide exceptional customer service, ensuring that all client orders and inquiries are handled with care and professionalism.
  • Team Leadership: Lead, mentor, and train the pastry team at both the commissary and Santa Monica locations, fostering a culture of excellence, innovation, and continuous improvement.
  • Collaboration with Other Departments: Work closely with the Director of Culinary Operations and other departments to align the pastry program with FARMSHOP's business and development strategies.
  • Compliance and Standards: Ensure that all pastry production meets health and safety regulations, FARMSHOP's operational standards, and best practices for food safety and sanitation.
  • Innovation and Research: Stay informed about industry trends, innovations, and best practices in the pastry and baking world, incorporating new techniques and ideas into the pastry program.
  • Customer Experience: Address any guest inquiries or concerns related to pastry items, ensuring prompt and effective resolution and maintaining FARMSHOP’s reputation for high-quality offerings.

Qualifications:

  • Previous experience in a pastry chef or similar leadership role in a high-volume bakery or restaurant environment.
  • Expertise in Viennoiserie, pastry production, and other baked goods with an emphasis on quality and consistency.
  • Culinary degree or equivalent pastry training.
  • Strong knowledge of food safety regulations, sanitation practices, and inventory management.
  • Leadership abilities with excellent communication and interpersonal skills, capable of managing and mentoring a diverse team.
  • Experience with product development, testing, and working on CPG lines (consumer packaged goods).
  • Ability to work in a fast-paced, high-pressure environment while maintaining attention to detail and product quality.
  • Flexibility to travel between the Wholesale Commissary and FARMSHOP Santa Monica as needed.
